Lentil Soup - vegan

A chilly start to today with temperatures in the 20's.  Beautiful frost on all the plants left in the garden.  Another good day for soup. 
Amber is helping me in the Kitchen today.  As I write, she is out there cutting up organic carrots and celery and onion--the magic three that starts almost all our soups.  A bag of organic lentil trio caught my eye this morning- red, green and black Beluga lentils are going to make a pretty soup today.  Adding some fire roasted tomatoes and perhaps a smattering of roasted red peppers. Finishing with a shimmer of olive oil. Omnivores could ask for some Parmesan cheese.  Should have about 8 pints available by lunchtime.
